⚠ Handle with extreme caution. This formula uses Mad Dog 357 1,000,000 SHU Pepper Extract, one of the most concentrated capsaicin products made. Each bottle is 5 fl oz of 1,000,000 SHU extract, added to the same 1 gallon (128 fl oz) of 10,000 SHU cayenne base.

As you add more extract, the finished heat climbs fast because the extract is 100x hotter than the base — going from 1 to 4 bottles roughly triples the SHU, not quadruples it, since the base sauce keeps diluting the total volume. As always, confirm with lab testing before labeling.
Ingredients
- 1 gallon (128 fl oz) Cayenne Sauce base, ~10,000 SHU
- 5 fl oz Mad Dog 357 1,000,000 SHU Pepper Extract
Method
- Suit up. Gloves, goggles, and respirator on before opening the extract. Work under ventilation.
- Stage the base. Measure 1 gallon (128 fl oz) of the 10,000 SHU cayenne sauce into your mixing vessel.
- Measure the extract. Measure out your chosen number of 5 fl oz bottles (1, 2, 3, or 4 — see heat level table below) of the 1,000,000 SHU pepper extract into a sealed, labeled container. Do this in the ventilated area — avoid pouring near your face.
- Combine slowly. With the mixer running on low, slowly stream the extract into the base sauce. Do not dump it in all at once — a slow pour prevents splashing and aerosolizing.
- Blend to uniform. Mix on low-to-medium speed for 3–5 minutes until the extract is fully incorporated and there's no visible separation or pooling of oil.
- Rest and re-check. Let the batch sit for a few minutes, then stir again — capsaicin oil can re-separate before full emulsification.
