⚠ Handle with care. Mad Dog 357 Original Hot Sauce is a serious 357,000 SHU product. Wear gloves and eye protection when handling concentrated batches, and mix in a ventilated area. Keep away from children and untrained staff.

Batch Overview

Base sauce Cayenne Sauce, ~10,000 SHU
Base volume 1 gallon (128 fl oz)
Additive Mad Dog 357 Original Hot Sauce, 357,000 SHU (5 fl oz bottles, 1–4 bottles per batch)
Finished batch volume 133–148 fl oz (~1.04–1.16 gal)
Estimated finished heat ~23,000–56,900 SHU (volume-weighted average, depending on bottle count)

Calculation: (128 oz × 10,000 SHU + additive oz × 357,000 SHU) ÷ total oz. At 1 bottle (5 oz additive, 133 oz total) this comes to ≈23,045 SHU; at 4 bottles (20 oz additive, 148 oz total) it comes to ≈56,892 SHU. This is an estimate based on linear dilution; actual heat should be confirmed by lab test (HPLC) or trained sensory panel before labeling, since product potency can vary by production lot.

Heat Levels by Number of Bottles

Each bottle is 5 fl oz of Mad Dog 357 Original Hot Sauce (357,000 SHU), added to the same 1 gallon (128 fl oz) of 10,000 SHU Cayenne Sauce base.

Bottles Additive Added Finished Volume Estimated SHU
1 bottle 5 fl oz 133 fl oz ~23,000 SHU
2 bottles 10 fl oz 138 fl oz ~35,100 SHU
3 bottles 15 fl oz 143 fl oz ~46,400 SHU
4 bottles 20 fl oz 148 fl oz ~56,900 SHU

Since the Original Hot Sauce is roughly 35x hotter than the cayenne base, each bottle you add lifts the heat noticeably — nearly doubling by the second bottle and pushing past 56,000 SHU by the fourth. As always, confirm final SHU with lab testing before labeling.

Ingredients

  • 1 gallon (128 fl oz) Cayenne Sauce base, ~10,000 SHU
  • Mad Dog 357 Original Hot Sauce, 357,000 SHU (5 fl oz bottles, 1–4 per batch)

Method

  1. Suit up. Gloves and eye protection on before handling concentrated product. Work in a ventilated area.
  2. Stage the base. Measure 1 gallon (128 fl oz) of the 10,000 SHU cayenne sauce into your mixing vessel.
  3. Measure the additive. Measure out your chosen number of 5 fl oz bottles (1, 2, 3, or 4 — see heat level table above) of Mad Dog 357 Original Hot Sauce.
  4. Combine slowly. With the mixer running on low, slowly stream the Original Hot Sauce into the base sauce.
  5. Blend to uniform. Mix on low-to-medium speed for 3–5 minutes until fully incorporated with no visible separation.
  6. Rest and re-check. Let the batch sit for a few minutes, then stir again before moving to bottling.
